I'm Rich!!

MMMmmmmm.  A whole, huge roaster full of spaghetti sauce simmering on the counter since 8:30 this morning.  I feel rich!

Fall is here and, as always, I get the urge to fill my freezer with goodies so that several times a week, I can have homemade meals ready and I can snuggle up on the couch with Ivy after school and read and read and read.

Yesterday, I collected all the herbs that were left in the herb garden and made "End of the Season Herb Garden Pesto."  Lots of it.  It's in the freezer now, waiting to be pulled out for dinner on a lazy reading day in the future.

I will also be making several kinds of homemade salad dressing today and the gorgeous, big peaches and plums will be baked into a bubbly cobbler for supper.

I'll post a picture and the recipe for the cobbler this evening after supper--if I remember to snap a picture before we devour it!

How about you?  What do you like to make ahead in copious amounts for YOUR freezer?

I wonder if it's too late to catch an LAX to O'Hare flight and still make it in time for dinner or at least in time for cobbler!!

You'd have to Apparate to get here in time! Cobbler's in the oven and dinner's in about 25 minutes. John, Beth, and Elliott will be joining us. I wish you could be here, too!

I'm sorry to say that I don't make anything in copious amounts to stock in my freezer. The best I do is planned leftovers for an extra meal.

Right now I have a Huge chicken lasagna and 8 loaves of garlic bread, plus 1 meatloaf . I also have whole wheat bread and cinnamon rolls. So I guess it is mainly bread!

Yum. You are rich. I was tempted to load up my roaster with spagetti sauce, but a) my tomato harvest was abysmal, and b) the roaster is full of pot roast. But it is a great idea.
