Don't try this at home
So, last night I prepared Dorothy's recipe for Swiss Potato Pancakes. They turned out perfectly; crisp and brown and lacy on the outside, soft and cheesy on the inside--very delicious.
However, they made a boat load. I prepared less than half of the "batter" and already had 10 pancakes. Supper was ready and everyone was hungry, so we sat down to eat.
I decided that I'd see if I could save the rest of the batter for later.
You know how it is with potatoes; they turn all rusty red and then that nasty purplish black when the starches come in contact with the air. I put the remaining batter in a cool whip container and then pressed some plastic wrap on the top, like you would with guacamole to keep the top from turning brown.
Lesson learned:
Potatoes are not avocados.
Don't put off 'til tomorrow what you could cook today.
(On a better note, we did have a few of the fried potato pancakes left over and they warmed up very nicely.)

Oh funny! I detest food wasting. This would have made me crazy, but I would have tossed this scary stuff out too. Glad to hear that the leftovers fried up nicely.
