What I Believe
QUOTE OF THE WEEK

[t]he Spirit of God shows to us hidden things, the knowledge of which cannot reach our senses: Promised to us is eternal life, but it is promised to the dead; we are assured of a happy resurrection, but we are as yet involved in corruption; we are pronounced just, as yet sin dwells in us; we hear that we are happy, but we are as yet in the midst of many miseries; an abundance of all good things is promised to us, but still we often hunger and thirst; God proclaims that he will come quickly, but he seems deaf when we cry to him. What would become of us were we not supported by hope, and did not our minds emerge out of the midst of darkness above the world through the light of God’s word and of his Spirit? Faith, then, is rightly said to be the subsistence or substance of things which are as yet the objects of hope and the evidence of things not seen.John Calvin, Calvin's Commentaries, Hebrews 11

Pre-Thanksgiving baking/cooking day

I love this day!  A whole day of cooking and baking.  A messy kitchen and good smells, last minute trips to the store, and anticipation of doing it all again tomorrow.

Already finished yesterday:

Small turkey roasted and sliced for sandwiches

Cranberry sauce

On the docket today:

2 pumpkin pies

1 pecan pie

Sage and Onion Dressing--done

Scalloped Cabbage

Spicy Sweet Potato Soup with Chipotle in Adobo Sauce  (this is a new recipe; I'll post it if it tastes as good as it smells!)

To do Tomorrow:

the BIG turkey

Mashed Potatoes and Gravy

Candied Sweet Potatoes

I think that about covers it!  What are YOU fixing for Thanksgiving Dinner?

We're in charge of pumpkin pies this year--and I can smell them baking now! We'll be heading to Brian's brother's house for a traditional Thanksgiving feast tomorrow! Enjoy your day, Kim! XO

I'm enjoying my preparations today too! Already finished are sweet potatoes, mashed potatoes, stuffing with sausage and golden raisins (so good!), cranberry sauce, pie crusts, and cranberry bread. Tomorrow I'll make pumpkin pie, roast turkey, gravy, roasted brussels sprouts. This dinner smells so delicious! Libby is going nuts. What a treat to be at home all day, cooking for my family, and Nate in the kitchen helping me. Blessings galore!

I love all the baking and cooking and sharing and tasting. I'm just so tired today. I think next year, I'm going to let go of my ambition to make the stuffing from all homemade breads! It is spectacular, but not so sure it's worth being so exhausted.
On a happy note- I just discovered a great recipe for brandied cranberries that is the BEST cranberry relish I've ever had.
