From my Mom's recipe box

Beck is asking for side dishes for her Christmas dinner.  Here's one that's a traditional side dish at our holiday meals. People love it even if they hate cabbage.  In my opinion, it's the only reason for Velveeta to exist.

Scalloped Cabbage

Make a white sauce: 

4 T butter
4 T flour
1 1/2 cups milk 

Add a 1/3 lb. of Velveeta cheese (I add a 1/2 lb.) cut into cubes and melt together.

In the meantime, parboil one large head of cabbage, rough cut, for 5 minutes.  Drain THOROUGHLY.

Place WELL-DRAINED cabbage into buttered casserole dish, pour sauce over cabbage, and top with buttered cracker crumbs (lots and lots of buttered cracker crumbs-yum!)

Bake at 375 degrees for 25 minutes or until hot and bubbly and cracker crumbs are browned and crispy.

I have never heard of anything like this before. I love, love, love cabbage (and brussel sprouts) I've got to try this. Thanks for sharing....
