Our Family's Traditional Christmas Eve Menu

Our Christmas Eve is the same every year.  We like it that way.

After Christmas Eve services, we hurry home for dinner.  The table is set, the ingredients are prepared in advance and as soon as we walk in the back door, I fire up the pre-measured rice water and broth, walk to the waiting electric skillet, get it going, and start pulling stuff out of the refrigerator for our non-traditional, traditional Christmas Eve candlit supper.   All the chopping and prep work is done before we leave for church and, as I've been doing this for about 20 years,  it all goes together very quickly:

Simple Egg Drop Soup

Heat several cans of reduced salt/ reduced fat chicken broth with a handful of green onion tops chopped on the diagonal, not too fine.  (reserved from Chicken and Walnuts recipe, see below)

Bring to boil, then start stirring the broth until it is swirling in the pan and add one scrabbled egg.  DO NOT STIR!  
Chicken and Walnuts

Stir fry:
4 boneless, skinless chicken breasts, diced raw
2 bell peppers (any color; we like red and yellow)
One bundle of green onions, cut on the diagonal (use about 1 inch of the green)
1 cup walnuts

Glaze/Thickening (measurements are approximate):
½ c. chicken broth
¼ c. soy sauce
Ground ginger to taste
Red pepper flakes to taste
1 T white sugar
Corn starch to make a slurry—about 2 heaping Tablespoons.

Stir fry vegetables in vegetable oil until tender crisp and colors are still bright.  Set aside.  Turn up heat in pan and add a little more oil.  Stir fry walnuts until pan just starts to smoke.  Set aside.  Stir fry chicken until cooked through.  Return all to pan.  Add thickening and heat until thick and bubbly.  Serve over rice.

I like the sound of this chicken with walnuts. Do you think it would work ok with Cashews as they are my favourites ;-)

Yes, I think you could use cashews. If I were making it with cashews, I'd probably use a bit more soy sauce so the glaze is a bit browner. If you try it, let me know how it works out for you.
