A NewTwist on an Old Favorite

Chicken Salad.  I've never met a chicken salad that I didn't like.  Usually I make mine very simply, with just a few ingredients--chicken, diced celery, and toasted, slivered almond. 

Today I made something a little different and it was not only delicious but pretty, too.

Cranberry Chicken Salad

3 large boneless, skinless chicken breasts, cooked and cubed small

1 rib celery, diced small

1 large handful Craisins or dried cranberries (Craisins are sweetened dried cranberries), rough chopped

1large handful pecans, rough chopped

1 T minced onion

Dress with Miracle Whip and Mayonnaise in equal parts

Serve on brown bread with leaf lettuce.

My youngest daughter introduced me to dried cranberries in salads. She used them in salads of all sorts, and they seem to always work well. And that red is always makes things pretty.

This is very like my chicken salad except I use slivered almonds instead of pecans and then I spice it up with a little cayenne or jalapeno peppers. Good idea, Kim- I think I'll have this for lunch!

Now that's a chicken salad I haven't had--yet! We love anything with some spice and some heat. Chicken salad is one of those blander dishes--what a great idea to kick it up a notch with cayenne!

Yum! I never make chicken salad as I am the only one in my house that would eat it and my husband gags at the first sight of mayo! My friend makes a delicious recipe with grapes and almonds, but yours sounds wonderful as well!
