Recipe: Open-faced Meatball Sandwiches

Meat balls:

 

1 lb. 90/10 ground beef

3 links hot Italian sausage

1/2 c. shredded parmesan

3 pieces of white bread, made into crumbs

Scant 1/4 finely minced onions

2 T fresh minced parsley

1 egg

Salt and pepper

 

Gently stir together ingredients.  Don't over mix.  Form into 2 inch balls.  Brown well in olive oil, drain.  Bake 30 minutes at 350 degrees.  Cover with spaghetti sauce and bake at 300 degrees for about an hour.  Serve over crusty bread and top with shredded parmesan cheese.  (We like ciabatta bread or homemade sourdough french bread).
