Here's this year's Saint Patrick's Day menu
BREAKFAST: Homemade Corned Beef Hash with Poached Eggs and toasted Irish Soda Bread, coffee
LUNCH: Reubens with Pub Fries
DINNER: Steel Head Trout with Capers and Sun-dried tomatoes, Colcannon, Green Salad with Sweet and Sour Dressing, Irish Soda Bread, Guiness Chocolate Pudding
Tomorrow I'll also be making two new dessert recipes to take to our Wednesday night prayer meeting--Chocolate Guiness Cheesecake and Potato Candy.
John and Beth and Elliott will be here bright and early for breakfast and they'll be joining us again for dinner this evening. I keep thinking about how much my father would love his little red-headed great-grandchild. He loved being Irish and instilled that same love for all things Irish in me. I hope that I can pass that down to my children and my grandchildren. A whole day of special meals on St. Patrick's day is one way I hope to do that.
I'll try to remember to take some pictures! Elliott spent the afternoon here yesterday and I meant to take pictures but I was having too much fun playing with him to remember to take any. It was warm and sunny and spring-like so we took a long stroller walk and sat on the front steps blinking into the sun shine and laughing together. He met some of the neighbors and explored the great outdoors.
Uh, oh! I better get of the computer and start the coffee now! Slainte!
Heidi asked for recipes, so I added in links to the recipes--all except the Irish Soda Bread recipe I tried this year. It was a disaster--it has such a soft crumb that I can barely slice it without it falling all to pieces. Tastes saltly, too. Heidi has her recipe for Irish Soday Bread on her blog, so if you're still looking for a recipe for soda bread, you can try Heidi's--it sure looks delicious and her son vouches for it!
(While I'm commenting on St. Patrick's Day recipes, I can tell you that I can't wait to dive in to the chocolate pudding. I licked the spoon (and then the bowl!) and it was fantastic! It's a fun recipe to make, too. (You get to make syrup from Guinness Stout)
