I plan to make the Italian White Bean Soup with Sausage and Spinach in the next couple of days. MMmmmm!

I saw a guy on the FoodNetwork serving a soup very similar to this by putting a crispy crouton in the bottom of the bowl, ladeling the soup on top (it was a thicker bean soup) and then drizzling the top with good olive oil. He said that is the way bean soup is served in Northern Italy.
